Instructions

Step 1
1. Heat the oil in a frying pan or shallow casserole over medium heat, then sauté the onion and garlic with a pinch of salt for 5 minutes or until the onion is so!.
Step 2
2. Stir in the tomato concentrate and cook for 1 minute, then stir in the tomatoes, cinnamon, oregano and butter beans, water and season to taste. Bring to a simmer.
Step 3
3. Put the lid on your pan or casserole dish and continue to simmer for 25 minutes or until thickened and bubbling. Keep an eye on the mixture to ensure it doesn’t catch the bottom of your pan. Add a splash of water if necessary.
Step 4
4. Serve topped with crumbled feta and chopped parsley.
