2flax eggs
1can pumpkin
15medjool dates
pitted, softened
2 teaspoonscinnamon
1 teaspoonnutmeg
1 teaspoonpumpkin pie spice
½ teaspoonturmeric
3 tablespoonscashew butter
raw
1 teaspoonvanilla bean powder
2 teaspoonsbaking powder
2 ½ cupsoat flour
½ cuprolled oats
or old-fashioned
½ cupdark chocolate chips
85%, nibs or organic raisins
Instructions
Step 1
Preheat oven to 350 degrees.
Step 2
Prepare flax "eggs" by mixing the ground flaxseeds with 1/2 cup of your favorite non-dairy milk. Stir the flaxseeds with the liquid and let sit for a few minutes to form a gel.
Step 3
Pit the dates and soften them by soaking them in warm water for 5 minutes. Blend the softened dates, flax "eggs," pumpkin, and all spices in a food processor. Once mixed, add raw cashew butter, vanilla and baking powder and mix well.
Step 4
Pour into a mixing bowl and stir in the oat flour, oats and chocolate chips and/or raisins. Shape into cookies and place on silicone pad or parchment paper lined cookie sheet.
Step 5
Bake for 20 minutes or until the cookies have slightly risen.
