Instructions

Step 1
Pick the mint leaves from the stems, then place in a food processor with the rest of the ingredients.
Step 2
If you want it less garlicky, mince the garlic, place in a dish + squeeze over lime juice, then leave for 10-15 minutes.
Step 3
You can grate the ginger too, but I find it’s easier to just whizz it altogether.
Step 4
Pulse the ingriednets into a course paste, and loosen with a splash of water.
Step 5
Season to taste with salt, and loosen with more water if required.
Step 6
Store in an airtight container / jar - will be good for 3-5 days, probably a week!
Step 7
Serve with curries, dahls, naan, poppadoms, samosas, bahjis - all your delicious Indian food.
