Instructions
Step 1
Peel and halve the onions, add to stock pot
Step 2
Peel and slice carrots
Step 3
Largely slice red pepper
Step 4
Finely slice green chillies
Step 5
Blend ginger and garlic or add to stock pot
Step 6
Add 1150ml water, carrots, pepper, chillies, salt, coriander leaf, veg oil, ginger and garlic paste to the pot with lid on and turn on the heat
Step 7
After 15 minutes, stir and reduce to simmer
Step 8
After another 45 mins, stir and remove from heat leave to cool
Step 9
Blend the mixture until smooth
Step 10
1. Add tinned tomatoes to saucepan and blend until smooth (2 mins), cook for 10 mins with splash of veg oil
Step 11
2. Add tomato puree, paprika, coriander powder, cumin powder, and turmeric
Step 12
3. Simmer for another 10 mins
Step 13
4. Add tomatoes to large stock pot, stir through thoroughly
Step 14
5. Simmer altogether for another 20 mins
