Apple Butter Porkchops

A delicious layered casserole of sautéed onions, thin sliced potatoes, sauerkraut, and thick cut pork chops with a sweet and savory apple butter glaze.

Instructions

Step 1
Preheat oven to 350°F and lightly spray a 9x13 baking dish.
Step 2
Toss the sliced potatoes in the oil, mustard powder, garlic powder, onion powder, salt and pepper. Set aside.
Step 3
Add the butter to a skillet over medium to medium high heat. When melted toss in the onion, season with salt and pepper and cook until browned. Pour into the baking dish.
Step 4
Layer the sliced potatoes over the onions.
Step 5
Spread the sauerkraut over the potatoes.
Step 6
Season both sides of the porkchops with salt and pepper and sear on both sides. Add on top of the sauerkraut.
Step 7
In a bowl mix together the apple butter, mustard, apple cider vinegar, and 1/4 tsp each salt and pepper. Pour over the porkchops.
Step 8
Cover with foil and bake 40 minutes to 1 hour or until the porkchops are 145° internal temp. Check at 40 minutes to make sure they don’t get dry.
