Step 1
Preheat oven to 200°C.
Step 2
Place fennel, potatoes, onion and thyme in a baking dish and season with salt and pepper. Add stock, cover tightly with foil and bake for 30 minutes.
Step 3
Meanwhile, heat a frypan over medium-high heat. Rub pork with oil and season with salt and pepper. Add to pan and cook for 5 minutes, browning on all sides. Add garlic to the pan in last minute of cooking. Set aside.
Step 4
Once vegetables have cooked for 30 minutes, place pork and garlic on top along with the apple. Return dish to oven and bake for 15 minutes or until pork is cooked.
Step 5
Allow meat to rest, loosely covered, in a warm place for 10 minutes before slicing and serving with vegetables, apple and any pan juices.
