Spinach Gnocchi

Welcome back to my series; what I cook for myself as a personal chef after a long day of work, spring, summer edition! Today it’s the quickest, high protein, spinach gnocchi and you are going to love it!! Ingredients: 1 pack of precooked gnocchi 3 frozen cubes of spinach (or 250g fresh, give or take) 1/2 a tin of cannellini beans 1/2 a lemon Salt and pepper 2 cloves of garlic 1 red chilli To serve: A blob of vegan stracciatella, I use ## Lemon zest Chilli More olive oil Method: Blend together the spinach, cannellini beans and their juice, lemon and salt and pepper until smooth. Pan fry garlic and chilli and then add the gnocchi and saute until golden. Pour in the sauce and let it simmer for a couple of minutes before topping it with the cheese, lemon zest, chilli and olive oil.

Instructions

Step 1
