Greek Salad with Seeds

Fairly classic Greek Salad but with seeds. I like slicing the onion finely and curing it in the dressing at the beginning of prep as it softens the flavour.

Instructions
Step 1
Slice the onion finely, mince the garlic and combine in a mixing bowl. Rub in the salt until dissolved. Add the olive oil and vinegar.
Step 2
Cut the tomatoes into bite-sized chunks and slice the pepper into strips. Cut the cucumber in half lengthwise, pull the seeds out with your thumb and slice on the diagonal. Finely chop the parsley. Add everything apart from the seeds and the feta to the bowl and toss.
Step 3
Plate the salad, crumble over the feta and sprinkle on the seeds. Serve with a final drizzle of olive oil.
