Instructions

Step 1
1. Place the diced potatoes, chopped onion, and minced garlic in your smaller crockpot.

2. Pour in the chicken or vegetable broth. Add salt and pepper to taste. Stir to combine.

3. Cover and cook on low for 6-8 hours or until the potatoes are tender.

4. Use an immersion blender to partially puree the soup, leaving some chunks of potato for texture. If you don't have an immersion blender, you can transfer a portion of the soup to a regular blender, blend until smooth, and then return it to the crockpot.

5. Stir in the whole milk, heavy cream, shredded cheddar cheese, and sour cream. Mix well until the cheese is melted and the soup is creamy.

6. Taste and adjust the seasoning with salt and pepper if needed.

7. Let the soup simmer on low for another 30 minutes to allow the flavors to meld.

8. Serve hot, garnished with crumbled bacon and chopped green onions or chives.
