Instructions

Step 1
In a bowl, mix the yoghurt, olive oil, dried oregano, dried thyme, paprika, minced garlic, salt, and pepper.
Step 2
Add chicken thighs to the marinade, ensuring they are well coated. Marinate for at least 30 minutes.
Step 3
Heat a grill or skillet over medium-high heat. Cook the chicken thighs for 6-8 minutes per side or until fully cooked.

For the crispy chicken skin - preheat your oven to 400°F (200°C).

Place the chicken skin (if using it) on a baking sheet. Season with salt and pepper.

Bake for 15-20 minutes or until the skin is crispy. Watch closely to prevent burning.

For the tsatziki - in a bowl, combine the Greek yogurt, diced cucumber, minced garlic, chopped mint, salt, and pepper.

Mix well and refrigerate until ready to use.

For the chips we just used some shop bought oven chips with a little oil, salt and Cajun seasoning and cooked in the oven on 400°F (200°C) until crispy.

For the salsa, combine diced tomatoes, finely chopped red onion, chopped parsley, salt, and pepper in a bowl.

Mix well and set aside.
Step 12
Now you can assemble and enjoy your sandwich! Lay down the souvlaki chicken, followed by the crispy chicken skin for that delightful crunch. Slather on a generous portion of fresh tzatziki. Pile on the Cajun fries, and then top it off with the tomato and red onion salsa. Sprinkle crumbled feta and finish with a layer of hummus.
