Ingredients

4boneless skinless chicken breasts
or thighs pineapple chunks, optional
1 cupwater
1 cupcoconut amino
½ cupswerve brown sugar
2cloves garlic
minced
1 tspfresh ginger
grated
½ cuppineapple juice
from canned pineapple chunks
1 Tbspcornstarch
1 Tbspwater
½ cupgreen onions
chopped

Instructions
Step 1
In a bowl, combine coconut amino, brown sugar, garlic, ginger, and pineapple juice to make the teriyaki sauce
Step 2
Place chicken breasts in Insta pot. Mix 1 cup of water and 3 Tbsp of prepared sauce and add to the Insta pot and cook chicken for preferred time.
Step 3
While the chicken is cooking, pour the reserved sauce into a saucepan. Bring to a boil. Mix cornstarch with 1 Tbsp water and add to the saucepan. Stir until the sauce thickens.
Step 4
Once the chicken is cooked, slice it and serve with the thickened teriyaki sauce and optional riced cauliflower, if desired. Garnish with chopped green onions and optional pineapple chunks.
