Boil water for pasta
Step 2
Roast tomatoes in olive oil until blackened, 45 mins
Step 3
Fry chorizo in remaining oil, and remove, reserving oil
Step 4
Add fennel seeds to chorizo oil, 20s. Add cooked tomatoes, mash. Add tinned toms, garlic, wine, soy sauce, tomato paste, chilli paste. Cook on low heat until dark and rich consistency
Step 5
Boil pasta
Step 6
Combine pasta, chorizo and sauce. Serve with grated parmesan and torn basil
