Ingredients
2 servings
sea salt
¼ cupextra virgin olive oil
2cans of chickpeas
drained and rinsed
1 teaspoonfresh rosemary
roughly chopped
1 teaspoonfresh thyme
roughly chopped
white pepper
to taste
1shallot
minced
2garlic cloves
minced
2 cupslow sodium chicken broth
12 ozdry pasta
short
½ cupfinely grated parmesan cheese
bacon
Cooked, chopped as garnish
Instructions
Step 1
In a pot, sautée shallot, garlic, and herbs in the olive oil over medium heat.
Step 2
When translucent, add the chickpeas and chicken broth just to cover. Let simmer until the chickpeas are soft and the broth has mostly evaporated. You should have a little over 1/4 cup left.
Step 3
Using a blender or immersion blender, puree the chickpeas, onion, and garlic until smooth. It should be thickened but not too thick. Season with salt and white pepper to taste.
Step 4
Boil the pasta in salted water according to the packages directions. Halfway through cooking, reserve about 1 cup of pasta water to loosen the sauce if it gets too thick.
Step 5
Add the pasta to the sauce pot, and half the cheese. Stir well. Plate and top with either with bacon or pancetta, a sprinkle more of cheese, and a drizzle of olive oil.
