'Schiacciata' is a flat focaccia, made irresistible in this version by gram flour and the broccoli stalk. Very economic, helps reduce waste and it's packed with fibre and vitamins. The video is in Italian but so easy to follow.

Instructions
Step 1
Clean the stalks: remove the bottom bit and peel the most ligneous layer with a veggie peeler. Now grate the stalk in a bowl, season and add your favourite spices.
Step 2
Add the gram flour and water and mix well
Step 3
Line an oven tray with greaseproof baking paper, pour the mixture and bake for 30 mins at 180C
