Instructions

Step 1
Place split peas into a large pot. Add 10-12 cups water. Add salt and pepper.
Step 2
Cover and bring to a boil over high heat; uncover, reduce heat, and simmer for about 1 hour, until the peas are soft and disintegrating.
Step 3
Add 2-4 cups water, onions, zucchini, sweet potato, carrot, and celery. Raise heat to medium; continue to cook as you prepare the meatballs.
Step 4
• In a medium bowl, combine all meatball ingredients until evenly distributed.
Step 5
Form meat mixture into 1-inch balls; slip them carefully into boiling soup.
Step 6
• Cook for 20-30 minutes, until meatballs are cooked through.
