Sticky Pomegranate Chicken
Sticky Pomegranate Chicken two ways because I just couldn’t decide which came out better! Both are delicious and perfect for Tu Bshvat!
Sticky Pomegranate Chicken:
Ingredients:
4 chicken breasts
1 cup flour or cornstarch
Sauce:
1 shallot diced
5 cloves garlic chopped
1 tablespoon tomato paste
1 ½ cup pomegranate juice
¾ cup Silan
½ cup soy sauce
Directions:
Sauté garlic and onions. Add tomato paste.
Cook for 5 min.
Add remaining ingredients.
Bring to a boil. Simmer for about 10 min.
Set aside
Baked Directions:
Coat chicken in flour, and Place chicken on a parchment lined 9x13 pan.
Pour sauce over.
Bake covered at 350 for 1 hour and 15 minutes.
Remove foil. Broil on high for about 5 minutes.
Fried directions:
Cube chicken breast and coat in cornstarch
Shallow fry chicken until the chicken has a crust. Does not need to be fully cooked. Remove most of the oil. Pour sauce in to the pan add 1 teaspoon cornstarch + 1 teaspoon water combined. Bring to a boil. Sauce should thicken. Lower and simmer for about 10 minutes or until chicken is fully cooked.
