Creamy Sausage and Leek Gnocchi

📍Serves 3 📍 598 Calories & 34g of Protein   ✨ 2 Leeks, sliced into rough slices ✨ 6 Pork Sausages, cut into small chunks (I used ’s reduced fat) ✨ 400g Gnocchi ✨ 300ml semi skimmed Milk ✨ 60g Parmesan, grated ✨ 20g Cornflour ✨ 60g Crème Fraiche ✨ 1tbsp Wholegrain mustard + dried Thyme   - ❤️

Instructions

Step 1
Add your Sausages and Leeks to a large baking dish, then spray well with some cooking spray and season with salt and pepper. Give it a mix then bake at 190c for 20 mins (stirring half way)   - After 20 minutes add in your gnocchi, spray with a little more oil and mix together, then pop back into the oven for another 10 minutes.   - While it’s in the oven, add your cornflour to a jug and pour in just enough of the milk to make a smooth paste in a small bowl. Add in your crème fraiche, mix well then pour in the remaining milk, along with your thyme, mustard, 40g of your parmesan and a hefty pinch of salt and pepper.   - Stir until you have a super smooth sauce, then pour over the gnocchi/leek & sausage mix, top with your remaining parmesan then bake for a further 15 minutes until golden, bubbling and delicious.
