Step 1
Sous vide steaks at 135 for 4 hours
Step 2
Remove from sous vide, season with salt and pepper. Sear in cast iron pan.
Step 3
Transfer steaks to a plate, cover with foil and let rest. In same skillet, add balsalmic vinegar and bring to a boil. Scrape off all of the bits in the bottom of the pan and mix into sauce. Boil for 1-2 minutes until sauce begins to thicken. Remove from heat and whisk in mustard. Add back any juice from the plate with the steaks. Whisk, pour into bowl and set aside.
Step 4
In same skillet over medium heat, add spinach. Sauted until wilted. Turn off heat and stir in lemon juice.
Step 5
Plate steaks with sautéed spinach and drizzle with balsamic sauce.
