Ingredients
2 servings
2boneless skinless chicken breasts
or 4 chicken thighs, whatever's your preference
1 tablespoonolive oil
1 teaspoondried thyme
or fresh
1 teaspoondried rosemary
or fresh
25gbutter
1 Tbspplain flour
150mlmilk
50gstilton cheese
you can use more if you'd like, jus don't use so much that the sauce gets too thick
250gmozzarella
Focaccia bread
or whatever your favourite sturdy bread is
Instructions
Step 1
Preheat your oven to 400°F (200°C).
Step 2
Place the chicken on a baking sheet.
Step 3
Drizzle olive oil over the chicken, then sprinkle with dried thyme, dried rosemary, salt, and pepper.
Step 4
Roast in the preheated oven for about 20-25 minutes or until the chicken is cooked through and juices run clear.
Step 5
Allow the chicken to rest for a few minutes before slicing it into thin strips.
Step 6
For the cheese sauce, melt the butter in a pan on low heat and then stir in the flour and let cook for 1 min or so.
Step 7
Gradually add the milk, stirring constantly until a smooth sauce forms or all the milk has been added.
Step 8
Bring the mixture to a simmer and stir in the cheese. Cook until the cheese has melted and the sauce has thickened slightly, then season to taste.
Step 9
Grab your favorite bread – something sturdy to hold all this deliciousness (we used focaccia). Lay down the roast chicken, creating the heart of the sandwich.
Step 10
Pour on a generous amount of blue cheese sauce, letting it mingle with the chicken. And of course, top it all off with a mountain of melted mozzarella, because, let’s be real, more cheese is always a good idea… and if you want to grill it to melt the mozzarella be our guest! Grilling cheese is never a bad idea.
