Instructions

Preheat the oven to 200°C (390°F), Fan 180°C (355°F), gas mark 6. Line a baking tray with baking parchment.

Place the chicken breasts on the baking tray, season with salt and pepper, and cook in the oven for 20-25 minutes or until the chicken is cooked through.

Meanwhile, spray a frying pan with some cooking spray. Add the leeks and cook over a medium heat for 5 minutes, stirring often so they soften but don’t colour. Pour the stock into the pan, bring to the boil and simmer until the liquid had reduced by about half, then stir in the cream cheese and crumble in the blue cheese. Stir, then simmer for a few minutes until the sauce starts to thicken.

Check the chicken. If it’s cooked through, place each breast in a dish and divide the sauce equally over each chicken breast and serve.
