Dave's French Onion Soup

One of my favorite soups. Finally perfected this one, and it really is a meal in a bowl!

Instructions
Step 1
Slice onions 1/4 in thick then slice in half and place in large soup pot with butter. Cook on low for 30-45 minutes
Step 2
Add in brown sugar, cooking sherry, thyme, Worcestershire sauce, bay leaves and salt and pepper.
Step 3
Add beef broth and onion soup mix. Bring to boil and let simmer for 1 hour. (Remove Bay Leaves)
Step 4
Grate the Gruyere Cheese then combine the parmesan cheese and mix.
Step 5
Cut the baguette into 3/4 inch slices and place on baking sheet. Brush both sides with olive oil.
Step 6
Place bread in oven and broil until golden brown.
Step 7
Place 2-3 pieces of browed baguette into oven safe bowls. Ladle soup into bowls about a 1/4 inch from the top.
Step 8
Cover with a healthy portion of the cheese mixture.
Step 9
Broil until cheese is golden brown and bubbly.
Step 10
Top with chopped green tail onions and serve.
