Slow Cooker Cajun Chicken Pasta (serves 4) 400g chicken thighs diced 50g cured chorizo finely diced 1 onion diced 1 heaped tsp. garlic paste 2 heaped tbsp. tomato puree 1 heaped tbsp. Cajun seasoning 1 tsp. smoked paprika 1 x 400g tin chopped tomatoes 100g mascarpone cheese 250g rigatoni pasta 250ml boiling chicken stock 50g Cheddar cheese grated Fresh Parmesan cheese to serve Method: 1: Pop the chicken, chorizo, onion, garlic, tomato puree, spices and tomatoes into your slow cooker pot then stir until well combined, pop on the lid then cook on the high setting for 3 hours or the low setting for six hours. 2: Add in the pasta, boiling stock and mascarpone then stir well, scatter over the cheese then pop the lid back on and cook on the high setting for a further hour. Serve with a grating of Parmesan cheese. . . . . .

Instructions

Step 1
1 Pop the chicken, chorizo, onion, garlic, tomato puree, spices and tomatoes into your slow cooker pot then stir until well combined, pop on the lid then cook on the high setting for 3 hours or the low setting for six hours.
Step 2
2 Add in the pasta, boiling stock and mascarpone then stir well, scatter over the cheese then pop the lid back on and cook on the high setting for a further hour. Serve with a grating of Parmesan cheese.
