Whisk together 2 tbsp olive oil, garlic, oregano and the juice of one lemon in a large bowl. Add the chicken and toss to coat, then cover and place in the fridge for 15 minutes or so.
Step 3
Preheat oven to 220°C. Heat remaining olive oil in an ovenproof pan over medium-high heat. Season both sides of the marinated chicken with salt and pepper. Place chicken pieces in the pan and pour in the remaining marinade.
Step 4
Cook the chicken for around 10 minutes, then flip and add the asparagus, sliced zucchini and sliced lemon.
Step 5
Transfer to the oven and cook for another 15 minutes, or until the chicken is cooked through and the vegetables are tender.
