Piri Piri Cauliflower Cheese

Piri Piri Cauliflower Cheese I make this cauliflower cheese recipe more than any other - it's warm and spicy and SO cheesy...and it's made with frozen cauliflower! We have it with a buttery jacket potato or chips...and if you haven't tried it with potato, you really need to!! 😄 I've written the recipe below - let me know if your going to make it, A xx Feeds 4 1kg frozen cauliflower florets 60g butter 1 onion finely sliced 50g flour  2 tbsp piri piri seasoning (use 1.5 if you want less of a kick) 500ml milk 100g grated cheddar cheese (plus extra to sprinkle over the top) 40g shredded spring greens (tough stems removed) or 60g fresh spinach Place the frozen cauliflower in a microwave and ovenproof dish. Microwave on high for 5 minutes. Cut any of the larger florets in half so the are all roughly equal in size. Place the butter in a non-stick saucepan and heat until melted. Add the sliced onion and fry for 6 minutes. Stir in the flour and piri piri season for 1 minute. Heat the oven to 200C Slowly add the milk a little at a time, bringing it to the boil each time before adding more. Stir continuously. Add the 100g grated cheese and shredded spring greens and stir until combined. Season the sauce with salt and pepper Pour the sauce over the cauliflower until covered then sprinkle with grated cheese. Bake in the oven for 30 minutes until cooked through and golden brown.

Instructions

Step 1
Place the frozen cauliflower in a microwave and ovenproof dish. Microwave on high for 5 minutes. Cut any of the larger florets in half so the are all roughly equal in size.

Place the butter in a non-stick saucepan and heat until melted.

Stir in the flour and piri piri season for 1 minute.
