This dish of poached eggs in a spicy tomato sauce is popular in North Africa and the Middle East, especially for breakfast. However, it can also be eaten as a lunch or dinner and with its very low energy density, it will fill you up for relatively few calories. Serve alone with rice or even crusty bread and it will still be a low energy density meal.

Step 1
Heat the oil in a large frying pan and add the chopped onion, red pepper and garlic. Cook for around 10 minutes on low heat until the onions begin to caramelise. Add a tin of chopped tomatoes, two tablespoons of tomato puree, and the herbs, spices and a pinch of salt. Stir well and leave on low heat to simmer for around 15 minutes. Crumble in around two-thirds of the feta cheese and stir this into the sauce. Using a spoon make three egg nests in the sauce and carefully crack an egg into each of these three nests. Crumble over the remaining feta cheese then cover the pan with a lid for 10 minutes or so to allow the eggs to fully cook through. Top with a sprinkle of coriander. Suggested servings: Two.
