Instructions
Step 1
Heat oil in non stick skillet. Sauté bell pepper, scallion and garlic about 2 minutes until softened.
Step 2
Add tomatoes and spices. Bring to a simmer and cook about 5 minutes
Step 3
Press the back of a tablespoon into the tomato mixture to create 6 wells. Crack an egg into each well. Season each egg with salt and pepper.
Step 4
Cover with a lid and cook 3-5 minutes until whites are firm. Remove from heat and garnish with feta.
