Basic Risotto

A classic Northern Italian dish, risotto is creamy and comforting. This version is much lower in fat than traditional recipes. Serves 4

Instructions

Step 1
Place a large heavy bottomed saucepan over low heat and when it is hot, add the oil.
Step 2
Add the onion and cook until softened, 10-15 minutes.
Step 3
Add rice and sauté one minute. Add 1/2 cup stock to rice and simmer until all the stock has been absorbed, stirring constantly and slowly.
Step 4
Continue adding stock until all the stock has been absorbed, continuing to add it gradually and stirring all the while.
Step 5
Serve immediately, garnished with Parmesan cheese.
