Instructions
Step 1
Chop vegetables.
Step 2
Heat potatoes in a nonstick skillet lightly sprayed with canola. Flip once during cooking.
Step 3
Season potatoes with smoked paprika, chili powder, and salt to taste.
Step 4
Poach eggs.
Step 5
Heat garlic oil in nonstick pan. Saute vegetables.
Step 6
Assemble with potatoes on bottom, veggies, and eggs on top. Sprinkle eggs with salt, pepper, and chili flakes.
