Pan Grilled Chicken with Lemon and Basil

Serve with steamed brown or white rice and a chopped tomato salad. Serves 4

Instructions

Step 1
Place the chicken, lemon juice, basil and oregano in a non-reactive glass or ceramic bowl and mix to combine. Cover and refrigerate at least 2 but no more than 4 hours.
Step 2
Drain the chicken and discard the marinade. Sprinkle with the salt and pepper.
Step 3
Place a large cast iron skillet over medium high heat and when it is almost smoking hot, add the chicken, waiting for the pan to reheat between additions. Cook until golden brown, just firm to the touch and cooked throughout, about 4 minutes per side, depending on the thickness of the chicken. No fat in the pan at all?
