Instructions
Step 1
In a large bowl, combine the eggs, Almond flour, almond milk, maple syrup, and salt and whisk until thoroughly combined.
Step 2
In a large non-stick skillet over medium high heat, melt the coconut oil. Dip each apple disc into the batter to coat it completely and let a bit of the excess drip off. Carefully lay the coated apple slices in the pan in a single layer and cook until they are lightly golden brown, 2 to 3 minutes. Using a metal spatula carefully flip the slices over and cook two to three minutes more.
Step 3
To assemble each toast, set an ample disc on a plate and top it with four banana slices in a single layer top that stack with another Apple disc, four more banana slices, and the final Apple disc. Repeat with the remaining apple and banana.
Step 4
Serve with the berries and additional maple syrup.
