Instructions
Step 1
Chop your ginger, then add it to a pot over medium heat along with the water. Allow to boil and then reduce to a simmer for 5-10 minutes. Take off the heat and allow to cool for 15 minutes.
Step 2
Strain the ginger from the liquid with fine mesh strainer over a bowl or container. (Discard ginger or save for another use!) Add your maple syrup or honey to the liquid and mix to combine.
Step 3
When ready to drink, fill a glass with ice and pour a little over halfway with the ginger water-syrup mixture. Then top off with seltzer and a squeeze of lime! Give it a stir enjoy!
