Instructions
Step 1
In a large nonstick skillet over medium heat, warm oil.
Step 2
Add onions and cook, stirring, until softened, about 5 minutes.
Step 3
Add garlic, salt, and black pepper and cook, stirring constantly, until fragrant, about 30 seconds.
Step 4
Transfer onion mixture to a 5- or 6-qt slow cooker
Step 5
Add tomatoes with their juice, broth, and potato, stirring well.
Step 6
Cover and cook until potato is tender and flavors are blended, 4 to 5 hours on High or 8 to 10 hours on Low.
Step 7
Using an immersion blender, puree soup. (Or puree in batches in a blender or food processor.) Stir in half-and-half. Cover and cook until heated through, about 15 minutes on Low.
Step 8
Ladle soup evenly into 8 bowls.
Step 9
Top evenly with crabmeat and sprinkle with chives and black pepper.
