Ingredients

2 cupspastry flour
sifted

¾ teaspoonssalt

1 teaspoonsbaking soda

1 cupsgranulated white sugar

1 TMalted milk powder

½ teaspoonground nutmeg

2eggs
large, at room temperature and and lightly beaten

⅓ cupcognac
bourbon, or whiskey

4 ozunsalted butter
melted, cooled to room temperature

1 cupfruit puree
Puree, fruit and let drain in strainer to remove liquid

1 teaspoonvanilla

1 cupwalnuts
or pecans, toasted and chopped

1 cupsraisins
or other dried fruit like apricots, cranberries, or dates, Optional
Instructions
Step 1
1. Heat oven to 425 degrees.
Step 2
2. Sift together flour, salt, soda, nutmeg, and sugar into a large mixing bowl.
Step 3
3. Make a well in the center, then stir in melted butter, eggs, liquor, puree, and vanilla Stir until just blended then stir in nuts and raisins,

4. Spoon mixture evenly into prepared muffin tin or individual muffin cups.
Step 5
5. Bake for 8 minutes at 425° then reduce heat to 350° and bake 20-26 minutes or until a tester inserted into the center comes out clean.
