Instructions

Step 1
In a skillet over medium high heat begin browning your meat

While that cooks, chop your onion and add it to the meat and continue cooking

Drain the grease once it’s done cooking

Season and add the lime juice. Mix well

Add enchilada sauce and bring to a simmer

Add drained corn and beans, mix well

Top with cheese

Turn the heat to low, cover, and let sit for 10 minutes

After 10 minutes, place the mixture in a separate dish

Add oil turn your skillet and turn the heat back up to medium

Fill the mixture in your tortillas

Fold in half like a quesadilla and cook both sides to your liking

Garnish with cilantro and serve with sour cream
