Berry Baked Oats

Instructions

Step 1
Preheat the oven to 180°C.
Step 2
Mash the bananas in a mixing bowl.
Step 3
Whisk in the egg.
Step 4
Add the vanilla extract and honey. Mix until combined.
Step 5
Add the melted butter and milk. Mix.
Step 6
Add the oats, baking powder, baking soda and salt. Fold the mixture together until the oats are fully combined.
Step 7
Break your chocolate up into small pieces and add to a small bowl with the berries and flour. Toss until the berries and chocolate are coated in the flour - this will stop them sinking to the bottom during baking.
Step 8
Fold the berries and chocolate into the oat mixture.
Step 9
Tip the mixture into a high-sided oven tray and smooth flat with the back of the spoon.
Step 10
Drizzle with almond butter and jam, and swirl it into the mixture with a spoon.
Step 11
Bake for 40 minutes.
Step 12
Allow to cool and then carefully flip out of the tray.
Step 13
Cut into portions.
