Chili

1 tablespooncooking oil

1red onion
large, chopped

4cloves of garlic

3jalapeños
seeded and chopped

1.5 lbsground beef

3 tablespoonschili powder

1 tablespoonchipotle powder

2 teaspoonsground cumin

1 teaspoonsmoked paprika

1 teaspooncayenne pepper

14 Ozcan chopped tomatoes

14 ozcan kidney beans

1 cupbeef broth

Instructions
Step 1
To make chili: In a large pot, heat the oil over medium heat. Add the onions and cook until lightly browned, about 5 minutes, then the garlic and jalapeños, and cook for 2 more minutes, until they're starting to soften. Add the beef and brown for about 5 minutes, then add the rest of the ingredients and bring to a boil. Lower the heat to a simmer and cook for about 40 minutes, until the chili has thickened and the flavors are melded. Remove from the heat.
Step 2
To make the hot dogs: In a large skillet, heat the water over medium-high heat until just boiling. Add the hot dogs, cover, and steam for 5 minutes, turning often to brown on all sides. Remove from heat and drain.
Step 3
Place one slice of cheese and then one hot dog in each bun, then divide the bacon, onion, tomato, chili, and mustard evenly among them. Serve hot.
