Instructions
Step 1
Firstly, prep all your ingredients in a bowl and place on a work top.












Step 2
Dice onions, tomatoes, peppers and sausage to your desired size

Into a hot pan on medium heat, place your diced tomatoes stir your tomatoes for 10 minutes until cooked.

Pour in your your onions, peppers and sausage fold in together with you tomatoes stir for 5 mins

Add in your crushed garlic, ginger, thyme, curry and salt You can add mixed vegetables it's actually very optional.







Step 6

Whisk your eggs and pour it into your pot on high heat stir everything together for 10 minutes until the above picture is your final result

Enjoy with baked potatoes, plantains, or rice.
