400 gramtofu

¾ cupflour

½ cupcornstarch

1 tspbaking powder

¾ tspwhite pepper

1 tspgarlic powder

1 tspchili powder
Dipping sauce
Instructions
Step 1
Remove packaging from the tofu then drain and gently squeeze out as much liquid as you can . Freeze for a few hours in a suitable container then defrost squeeze out the liquid again and repeat this process one more time . Freezing and defrosting twice is what gives it the firmness

Step 2
Once defrosted slice the tofu then press down some weight with a chopping board and some bean cans to remove the excess moisture for 15 minutes
Step 3
In a bowl mix flour cornstarch white pepper garlic powder chilli and salt to taste then coat each slice of tofu in the flour and shake off the excess





Step 4
Add the baking powder to the flour and mix then add cold sparkling water . Add 100 ml at first the batter should be thick but manageable ! The batter should not be runny . Dip the tofu in then fry on a pan with a little oil on medium high heat until golden and crispy
Step 5
Add all the ingredients for the dipping sauce into a little bowl then dunk in the tofu and enjoy
