QUICK VERMICELLI NOODLE SALAD 🌱⁠

Time to cook: 5⁠ Serves: 2⁠ ⁠ Notes: ⁠ *For vermicelli noodles ready in 5 minutes, place the noodles in a heat proof bowl. Cover with boiling water and leave to stand for 3-4 minutes. Drain and rinse under cold water.

Instructions

Step 1
To make the dressing, combine all the ingredients in a small bowl or jar. Whisk or shake to combine. ⁠
Step 2
Mix all of the salad ingredients together in a large bowl. Pour the dressing over the top and use a pair of tongs to combine the ingredients. ⁠
Step 3
Serve topped with fried spring onions, sesame seeds and fresh chilli, if using. ⁠
