Instructions

Step 1
Begin with adding the warm water to a jug at around 38c/100f. Add the sugar & yeast and stir. Cover and leave for 10 minutes.
Step 2
Add the flour and salt to a large bowl and mix well.
Step 3
Once the yeast has bloomed, stir one more time and add to the flour.
Step 4
Using your hands bring the dough together. It will be quite dry and shaggy which is what you want.
Step 5
On a board, knead the dough continuously for 10 minutes. The dough will come together and by the time you finish kneading it should be firm and springy.
Step 6
Add a little olive oil to a bowl and place in the dough. Cover and leave to rise for one hour.
Step 7
Once risen, place on a chopping board and slice into 6 even pieces.
Step 8
Then roll the dough using a cupping shape with your hands until it has formed a smooth ball. Repeat until all are the same size.
Step 9
Place on a floured baking tray and cover. Leave to sit for 10 minutes.

Meanwhile mix the sesame seeds with a pinch of salt.

Crack the egg and whisk (for egg wash).
Step 12
Carefully place your thumbs into the centre of the dough and pull apart. Then using your index fingers slowly twirl the dough to form a bagel shape.
Step 13
Get a large pot of water onto simmer (not boil).
Step 14
Add the bagels in batches and simmer on both sides for 1 minute.
Step 15
Then place onto baking paper and brush with egg wash.
Step 16
Sprinkle over the sesame seeds and bake in the oven at 220c/430f for 25 minutes.

Leave to cool for 30 minutes, then slice and enjoy!
