Oat and Bran Choc Chip Snack Bars (Vegetarian)

Most snack bars that are marketed as “healthy” or “healthier” are, in reality, high in sugar and calories, often with energy densities of 4.5 calories per gram or more. Unfortunately, it is virtually impossible to make a low energy dense bar without using artificial sweeteners and similarly, high protein snack bars are usually high in energy density or contain protein powders. With equal amounts of bran and oats, this chocolate chip bar qualifies as a HighSatiety recipe due to its high fibre content of over 6 g per 100 grams. It is also significantly lower in calories than most snack bars. If you are avoiding chocolate but still want the sweetness you can replace the chocolate chips with raisins without the bars becoming high in energy density.

Instructions

Step 1
Blitz the bran flakes in a blender for 10 seconds until they have a flour-like consistency. Transfer them to a large bowl and add the oats, chocolate chips and finely chopped dates and nuts. Crack the eggs into the blender with the water, apple sauce and maple syrup and blitz for 10 seconds. Pour this liquid over the other ingredients and mix well. Use your hands to create oblong-shaped snack bars and place them on greaseproof paper on a baking tray. Put the tray in a preheated oven at 180°C and cook for 20 to 30 minutes turning the bars over after 10 to 15 minutes. Leave to cool or refrigerate before eating. Makes 8 to 10 snack bars.
