potato marraka
such an easy and wonderful breakfast dish you can also have it for dinner as a light meal.
ingredients:
3-4 potatoes
1 onion
3-4 eggs salt & pepper
olive oil
- start by finely chopping the potatoes into small cubes & finely chop the onion.
- add 3-4 tbsps of olive oil to a pan and fry the potatoes.
- add a splash of water and let them simmer for 3-4 minutes till they are soft and tender.
- once cooked, and the water has completely evaporated, add the onions and saute for a minute or two.
- once the onions are welted, crack 3-4 eggs and stir, keep stirring till the eggs are cooked.
- season with salt and a lot of black pepper.
- garnish with some greens and more black pepper.
- serve with bread and enjoy.
