Instructions

Step 1
Drizzle the olive oil in a large pan over medium low heat, add the onions and sauté until lightly caramelized, approx 10 to 15 minutes, then stir in 2 cloves of minced garlic then add the 8 cloves of garlic and sauté for another 5 minutes, turn the heat to low to keep them from browning.
Step 2
Meanwhile, in a bowl, toss the the cubed potatoes with salt and allow it to rest for 5 minutes, then rinse and drain.
Step 3
Return the cubed potatoes to the pan with the caramelized onions add a tablespoon of oil, with the water then put the lid on and allow to cook for about -5 minutes, stirring occasionally, until nearly tender.
Step 4
Sprinkle with the thyme, spices and season with salt, pepper & give it a quick mix.
Step 5
Add 1 tablespoon of olive oil and increase the heat to medium for about 5 minutes, toss them occasionally until you get a golden brown potato.
Step 6
Beat the eggs with a pinch of salt, pour them in the pan and cook, stirring often to scramble just until done, remove from heat and adjust seasonings to taste.
Step 7
Serve immediately with chopped fresh Parsley.
