Instructions
Step 1
Cube the potatoes and place in a pot. Cover with water and set heat to high. Once the water is fully boiling, let it go for about 8 minutes.
Step 2
While potatoes are boiling, slice your onion, pepper, and garlic.
Step 3
Sautee the vegetables with 1 tbsp of olive oil, just until the onion is translucent and the peppers are soft.
Step 4
Once the potatoes are boiled, remove from heat, strain, and let cool.
Step 5
Melt 1 tbsp butter with 1 tbsp of olive oil over medium high heat. Add the potatoes and cook them just until browned, turning occasionally.
Step 6
Add the peppers and onions to the potatoes. Mix and make 4 spaces for the eggs.
Step 7
Crack the eggs into the spaces and cook just until the whites are set.
Step 8
Dress with green onion, paprika, and salt to taste.
