Cajun Spiced Cod With Chilli & Tomato Butter Beans
This is what I like to call a winter fish recipe. It’s delicious and nutritious, yet feels like a big hug in a bowl. Made in under 20 minutes and a shear delight to eat….is this something you’d enjoy?
Serves 2
INGREDIENTS
2 fillets of cod
Marinade
Juice of half a lime
1 teaspoon honey
1 teaspoon ground cumin
1 teaspoon smoked paprika
Beans
1 onion - finely chopped
4 cloves garlic - crushed
1 red chilli - finely chopped
200g tomatoes - I used small plum vine tomatoes and halved them
1/2 teaspoon ground cumin
1/2 teaspoons smoked paprika
350-400g cooked butter beans - I used
1 tablespoon chopped coriander
Salt & pepper
Foil or parchment paper to stop the fish from sticking
METHOD
Preheat the oven to 210 degrees c conventional, 190 degrees c fan.
Mix the marinade ingredients together and coat the fish thoroughly. Season with salt and pepper and cook for 10 minutes in the oven.
Sauté the onion until soft and sweet. Now add the garlic and chilli and cook for 2 minutes. Add the tomatoes and cook until the juices start to release. Drain the beans and then stir into the tomatoes until warm through. Mix in the coriander just before serving.
Plate up the beans, top with the cod and spoon over the juices from the pan.
