🐣 STEAMED CHICKEN with mushrooms 蒸滑雞
- 1/2 chicken (2 lb)
- 1/4 oz cloud ears (dry), about a handful or quarter cup
- 6 dried dates
- 6-7 shiitake mushrooms
- 1 pair of Chinese sausages
MARINADE
- 1/4 tsp of salt
- 1/8 tsp of white pepper
- 1/2 tbsp of dark soy sauce
- 1 tbsp of oyster sauce
- 1 tbsp of Shaoxing wine
-1/4 tsp of sesame oil
- 1.5 tbsp of cornstarch
🐣 INSTRUCTIONS
1. Prepare the dry ingredients. Rinse & hydrate wood ear, shiitake mushrooms, and red dates with warm water.
2. Cut mushrooms and red dates into small pieces. Cut scallions, ginger, and Chinese sausages.
3. Cut chicken into small pieces (note: we have a whole chicken, but we’re only using half a chicken). Trim off the excess fat.
4. In a mixing bowl, add chicken, scallions, ginger, Chinese sausage, mushroom, wood ear and red dates.
5. Add seasonings - salt, white pepper, dark soy sauce, oyster sauce, shaoxing wine. Add cornstarch to velvet the chicken & lock in the moisture. Mix well.
6. Transfer to a shallow bowl and steam for 20-25 minutes until it’s fully cooked.
7. Enjoy with rice!
