Instructions

Step 1
Preheat your oven to 350°F (175°C). Grease two 9x5-inch loaf pans.
Step 2
In a large mixing bowl, combine the flour, sugar, salt, baking soda, and ground cinnamon.
Step 3
In a separate bowl, whisk the eggs, oil, and vanilla extract until well blended.
Step 4
Gradually add the wet mixture to the dry ingredients, stirring until just combined.
Step 5
Gently fold in the drained crushed pineapple and mashed bananas. Optionally, can add shredded coconut.
Step 6
Divide the batter evenly between the prepared loaf pans.
Step 7
Bake in the preheated oven for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Step 8
Remove from the oven and let the loaves cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
