Vegan Meat Sauce + Spaghetti

Walnut Meat:
1.5 cups walnuts
1.5 cups baby Bella mushrooms
You also need:
1 tbsp olive oil
12 oz spaghetti
1 tbsp fresh minced garlic
1 diced yellow onion
1.5 cups diced zucchini
1 32 oz jar marinara sauce
garnish: basil + vegan parmesan
How to:
1. In a food processor, pulse together walnuts and mushrooms until combined and still grainy, do not turn into mush,
2. Boil a pot of water and make your pasta.
3. In a nonstick pan, saute onion + garlic in olive oil on medium. Next, add in the zucchini and saute for 5 minutes. Add in the walnut meat and keep stirring until the water cooks out and it’s slightly browned. Add in the marinara sauce and simmer on low for another 5-7 minutes.
4. Mix with your pasta and enjoy!
