Step 1
Heat oil in a large frying pan over medium heat, add shallot, carrot and celery, cook for about 5-7 minutes until soft.

Add garlic, walnuts, lentils, tomato paste and red wine vinegar, stirring often, cook for 2 minutes. Add the tomato sauce, stir to combine and simmer for 10 minutes; season with salt and black pepper
Step 3
Cook the pasta according to the package instructions
Step 4
Once the pasta is strained, toss the sauce through the pasta, serve with toasted breadcrumbs and fresh parsely.
