1 Tbspcoriander
1 tspcumin
1 tspsmoked paprika
1 Tbspchili powder
1 ½ tspcrushed red pepper
1 Tbspgranulated garlic
1 ½ tspsea salt

2 ½ cupsmadras lentils

GF tortillas
2 cupsshredded cheddar blend
Instructions
Step 1
Use a 10 inch sauce skillet turn heat medium high add 1 tablespoon avocado oil, then add beef, and spices. Brown meat and then add half a cup water, stir reduce heat to medium low add lid allowed to simmer for about 10 minutes, then remove from heat. Preheat oven 400. To a casserole dish begin to layer tortillas. sprinkle with shredded cheddar blend. sprinkle the meat, cheese sauce, onions, Sriracha, cilantro, and repeat, approximately 4 to 5 layers minimum. I use two tortillas per layer. Final layer sprinkle with cheese cover with aluminum foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes. Rest with foil lightly on top approximately 10 minutes. Serve with homemade guacamole and sour cream, and sprinkle with more fresh cilantro.
